- Preheat oven to 425F.
- Heat a cast-iron skillet over medium heat. Add 2 tablespoons of butter to the skillet and melt. Add the rhubarb, cinnamon, and brown sugar, and cook until tender. Rhubarb sauce should be thick; if not, add a few teaspoons of flour to thicken. Remove from heat.
- In a blender, combine milk, eggs, sugar, vanilla, oil, and flour. Blend until smooth and lump-free. The batter will be thin.
- Dot rhubarb sauce with 2 tablespoons of butter. Pour the batter over the rhubarb mixture and bake for 23-25 min. The Dutch baby will puff up in the center and become dark brown around the edges.
- While the Dutch baby bakes, prepare the strawberry sauce.
- In a medium saucepan, melt 2 tablespoons of butter, add in fresh sliced strawberries, vanilla, sugar, and lemon juice. Cook until the strawberries soften and release their juices. If the strawberries release a lot of juice you can thicken the sauce with a cornstarch and water slurry.
- To make the slurry, mix cornstarch and water, slowly stir into the strawberries. The strawberry sauce should be thick and glossy.
- When the baking is complete, remove the Dutch baby from the oven. The center of the dish will collapse, creating a concave center.
- Dust with powdered sugar and top with strawberry sauce, whipped cream, or ice cream and serve warm.
Notes
- For the rhubarb sauce you can use frozen or fresh. Frozen rhubarb releases more water so be sure to drain well so you don’t water down your batter.
- When making your batter, add wet ingredients to the blender first before adding dry ingredients. This creates a smoother batter when blended. If you don’t have a blender and are using a bowl, whisk the wet ingredients and slowly add the dry ingredients and whisk until no lumps remain.
- When assembling your ingredients, pour your batter slowly into the skillet; this will prevent the rhubarb sauce from mixing in with the batter.
- For the strawberry sauce you can use fresh or frozen strawberries. Check your label as many frozen strawberries have added sugar and you won’t need to add sugar in the recipe.
